Vietnam's Stir-Fried Morning Glory: A Top 100 Vegetable Delight Worldwide

The Vietnamese stir-fry dish Rau Muống Xào Tỏi, prepared with morning glory and garlic, has been featured on TasteAtlas’s roster of the globe's finest 100 vegetarian meals, ranking at position 24.

Rau muong xao toi features morning glory (also known as water spinach) blanched and stir-fried with garlic and salt. A splash of fish sauce is added near the end of cooking, and many versions include a touch of oyster sauce for extra depth.

Usually, this dish is enjoyed piping hot as the initial course in a classic Vietnamese three-course meal, succeeded by either a boiled or steamed item and concluded with some soup.

Aside from its position in worldwide rankings, stir-fried morning glory is also considered one of the top Vietnamese stir-fries and side dishes according to TasteAtlas.

Leading the chart is parmigiana from Italy, an oven-baked casserole made with layers of eggplant, tomato sauce, and cheese. This is succeeded by fritto misto, yet another Italian specialty consisting of mixed fried seafood, veggies, or meats. Next up is parmigiana alla napoletana, a Neapolitan variation featuring breaded and fried eggplant slices in a casserole. Coming in at fourth place is sopa tarasca, a hearty Mexican soup based primarily on beans. Rounding out the top five is diri ak pwa, a traditional Haitian dish comprising rice and beans cooked together.

The rankings were derived from 18,878 user ratings, out of which 10,667 were validated by the TasteAtlas system.
